Every two years, the National Association of Food Equipment Manufacturers gathers for The NAFEM Show. It's one of the best opportunities for food and beverage operators to come together and discover new innovations that can help make their establishments more efficient and profitable.

As part of The NAFEM Show, attendees are invited to see the "best of the best" as part of the WHAT'S HOT! WHAT'S COOL!® What Works! exhibit, where game-changing equipment and supplies that have real-life impact on foodservice operations are showcased.

At The NAFEM Show 2019, Perlick will be included in this prestigious exhibit for our support of the Shine Restaurant & Potion Bar, where we utilized our Tobin Ellis Signature Draft Cocktail System to create a customized process for serving "potions" on draft for the first time ever.

So what was the problem? How did we solve it? And how does it work?

Traditionally, Shine served their potions out of glass bottles, which could be agitated before serving. Serving them out of bottles, though, created storage, inventory, and reuse issues. When they moved to their new location, they decided the most efficient, sustainable, and profitable way to serve their iconic potions was on tap.

The next problem was, how do we do this? Their potions are comprised of a variety of ingredients including fresh herbs that are not strained out during the cooking process. The result is a beverage that is pulpy in nature, a drink that tends to settle and separate into different levels due to the nature of its fantastic ingredients. With draft potions, the settling was happening in the kegs.

That's where Perlick stepped in. We tested our new draft cocktail system and engineered the right solution that allows Shine to serve their potions on draft, consistently the same from pour to pour.

"We needed to find a tap system that would agitate the herbs in the keg so we can pour the same consistency potion every time. Since that did not exist, we had a friend recommend we talk with Perlick," said Jennifer Emich, one of the owners of the Boulder, Colorado restaurant.
